How to Make Vegan Lasagna
Preheat your oven to 375°F (190°C). Soak the cashews in hot water for at least 30 minutes, then drain.
To make the cashew ricotta, blend the soaked cashews, lemon juice, nutritional yeast, one garlic clove, and 1/2 cup of water until creamy but still slightly textured.
Sauté the remaining garlic, sliced zucchini, and spinach in a pan until the spinach is wilted and excess moisture has evaporated.
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
Layer three lasagna noodles, followed by a layer of cashew ricotta, a portion of the vegetable mix, and more marinara sauce.
Repeat the layers until all ingredients are used, finishing with a layer of noodles topped with marinara and vegan mozzarella shreds.
Cover with foil and bake for 40 minutes. Remove foil and bake for another 15-20 minutes until the cheese is bubbly and the noodles are tender.
Let the lasagna rest for 15 minutes before slicing to ensure the layers stay intact.
Tips for Best Results
-
·
Soak your cashews overnight for the smoothest possible ricotta texture.
-
·
Squeeze the excess water out of the cooked spinach to prevent a soggy lasagna.
-
·
If using no-boil noodles, add an extra half-cup of water or sauce to ensure they soften properly.
-
·
For a nut-free version, swap the cashews for 1 package of extra-firm silken tofu.
